The prized precious white truffle has a smooth surface, yellow-ocher or yellow-olive, sometimes even gray-greenish, it is harvested in autumn and early winter.

It has a white gleba and with age it takes on reddish spots on a gray background. It grows in clayey soils, often near streams near broad-leaved plants such as poplars, linden trees, oaks, beeches, hazelnuts, turkey oaks, hornbeams, etc.

The white truffle is the most sought after and precious species, it is mainly consumed with noodles with butter or meats with not too pronounced flavors. It must be thinly sliced with a “mandolin” or with the typical “truffle slicer”.
